The sausage-tomato-cheese combo is one of my favourites, and it has also rubbed off on my daughter. As such, when I came across this recipe, I immediately knew that both of us would love to have this for brekkie or as a light lunch.
The resulting bread is a hybrid between a bun and pizza, with tart like features. I especially like the tart markings around the bread. Don’t you think its pretty?
You will need:
Dough
200 g bread flour
3 g instant dried yeast
20 g sugar
3 g salt
20 g unsalted butter (soft), with extra to butter the tart pans
140 g whole milk
Topping
Sausages, sliced
Tomatoes, diced (I omitted this due to sheer laziness)
Mayonnaise and ketchup
Mozzarella cheese, shredded
Preparation:
Put the ingredients for the dough (except for the butter) into the breadmaker pan as per the manufacturer’s instructions, and select the dough function. Add the butter after about 5 minutes.
Place the dough into a large, lightly oiled bowl. Cover with cling film and leave to rise in a warm place for about one hour, until the dough has doubled in size.

If you do not have a breadmaker, do not despair, you can also knead the dough by hand. To do so, simply put the flour and yeast in a bowl. Stir to combine. Add the sugar and salt, and stir again. Make a well in the centre of the flour. Pour milk into the well, and mix to make a soft, moist dough.
Place the dough onto a clean, lightly floured surface and, with lightly floured hands, knead for 5-10 minutes, until it is smooth and elastic. Add the butter into the dough, and continue to knead for another 10-15 minutes until the dough is no longer sticking to the surface and your hands.
When the dough program has finished (if using machine) or the dough has risen, take the dough out of the machine / bowl. Place it onto a clean floured surface and punch down. Divide the dough into 10 pieces, rest for 10 minutes. Preheat the oven to 180 deg Celsius. Butter the tart pans (9 cm). Note: I used 10 cm tart pans, and hence, only managed to divide into 7 portions.
Roll the dough into 12 cm circle and place the dough into the tart pans. Use your finger to press the dough until the dough is up to the rim of the pan (without shrinking back). Brush the base of the dough with the ketchup, put the sausages on top and sprinkle with cheese. Place the diced tomatoes, and sprinkle again with cheese. Squeeze the mayonnaise over the bread.
Bake for 10-12 minutes or until the breads are golden brown.
